With its blend of familiar favorites and culinary exploration, Ember Eatery invites everyone to find something they love, discover something new, and create new memories.
Elevated Eating at Ember
Ember Eatery is Colorado Mesa University's newest gathering place, a modern food hall designed to welcome students, faculty, and the Grand Junction community into a shared culinary experience. Opening in August 10, 2026, Ember sits at the heart of the Formation District, alongside the Maverick Hotel and the Asteria Theatre, creating a vibrant hub where campus life and community culture come together.
Where Do I Park?
Ember Eatery has designated retail parking just north of the dining hall. This lot is designated for Ember customers only. In case you get a parking ticket, submit a photo of your purchase reciept with your ticket appeal.
