The Culinary Arts program and the Viticulture and Enology program at Western Colorado Community College are joining forces to offer Pop-Up Dinners at the Chez Lena Restaurant.

Assistant Technical Professor of Culinary Arts Wayne Smith developed each course of the menu. Technical Instructor of Viticulture and Enology Jenne Baldwin-Eaton selected the wines. Culinary students will prepare each meal, dining room management students will serve the meals and Viticulture and Enology students will pour the wines. Proceeds are used to fund scholarships for both programs.

February 14, 2020 

Valentine Dinner

6-6:30pm- Hors D'oeuvre & champagne 
6:30-8:30pm- Four-course dinner 

     Poached chicken breast with fresh fettuccine and oyster mushrooms in cream

     Butternut squash and apple soup with fried sage leaves, fresh cheese, and toasted pine nuts. 

     Salad of house-smoked rainbow trout, asparagus, radish, and arugula with citrus vinaigrette 

     Sous-vide beef tenderloin with Madeira sauce, parsnip-potato puree, and sauteed spinach
