Pop Up Dinners

The Culinary Arts program and the Viticulture and Enology program at Western Colorado Community College are joining forces to offer Pop-Up Dinners at the Chez Lena Restaurant.

Assistant Technical Professor of Culinary Arts Jonathan St. Peter developed each course of the menu. Technical Instructor of Viticulture and Enology Jenne Baldwin-Eaton selected the wines. Culinary students will prepare each meal, dining room management students will serve the meals and Viticulture and Enology students will pour the wines.

Harvest Dinner Celebration

6:00-6:30pm Hors d’oeuvre
6:30-8:30pm Dinner

Menu
Seared scallop and fennel confit
Lacquered pork belly with forest mushroom risotto
Grilled Colorado lamb chops and “home grown” autumn root vegetables
Hand-dipped chocolates filled with guajillo chili ganache

Each food item will be paired with a Red Fox Cellars wine.

6:30-8:30pm Dinner - menu and wine pairings to be announced. There will be 2 contrasting wines served with each course and a box of chocolates to take home at the end of the meal.
