Alyssa Kirby is the instructor for the Dining Room Management class as well as the Wine, Beer and Spirits class in the Culinary Arts program at Western Colorado Community College.

After nearly 20 years working in restaurants and hospitality, Kirby's main focus as an educator is a real-world, practical application approach to understanding the material. She draws on parallels from current restaurant trends in food and beverage throughout the class content.

Kirby encourages her students to view foods and beverages, not as the final product that they see at a night out in a restaurant, but instead as individual flavors that have been carefully chosen to orchestrate that perfect bite or refreshing sip. By putting a spotlight on descriptive selling techniques, product knowledge and communication, the curriculum for her classes allow students to feel confident in the whole picture, from field to folk.

With her experience of managing and serving guests in restaurants throughout Colorado and California, Kirby uses her instructional techniques to paint a bigger picture for her students about the importance of strong customer service skills and the life-long benefits from working within this industry.
